When my boys were younger they found lettuce super challenging to eat. It was a textural thing. Lettuce seems to go into the mouth and almost instantly goes flaccid and sort of mushy.
And I get that. But I also wanted them to learn to eat salads.
I discovered totally by accident (mixed bag of salad stuff on holiday) that baby spinach was actually much easier to eat. It has a more robust structure so doesn't go mushy.
I have since tested my theory on a lot of other people's kids and realised that spinach does tend to be a better option as a gateway food to salads.
