Jacket potatoes are one of my staples. They are so easy to cook, keep a few days in the fridge and can be matched with loads of other foods.
I often chuck them in when cooking something else and if it's done before them I leave baking until after dinner as they are just not precious.
If your child likes potatoes they are definitely worth a whirl. I send in a food thermos so they're hot.
Stack the deck for your child. If they like butter make them buttery. If they like cheese make them cheesy. Beans? Sour Cream? Mince?
