Well yesterday was a bit mad for me and I reached dinner knowing I hadn't planned anything for Max (unusual for me as I am normally really organised - I blame it on the lack of sleep after the midnight earthquake wiggles!)
I had our dinner ready to roll with root veg from the night before and beans and asparagus to quickly steam. I also had a mini roast beef that I knew I could cook in 30 mins.
But what to do for Max who has chosen not to eat meat?
With the clock ticking I suddenly had a brainwave and decided on a cheese and spinach soufflé. Which sounds ever so posh and complicated but in reality was eggs, grated cheese, some seasoning and chopped veg baked in the oven.
Following one of my core mantras - cook once and eat thrice - I made a raft of them which made today's lunches super easy as both boys could take two in their thermoses!
